Crispy Roasted Potatoes
Fingerlings, red onion, rosemary & thyme.

lbs
fingerling potatoes
sliced into roughly equal sized pieces, about a quarter inch thick

small red onion
sliced thin
1
tbsp
olive oil

tsp
fresh rosemary
chopped
1
tsp
fresh thyme leaves
Salt & pepper
Instructions
Preheat oven to 350.
Slice potatoes and red onion.
Coat in olive oil.
Arrange evenly on a sheet pan.
Season with salt, pepper, and herbs.
Bake for 1 hour, flipping once.
