POMEGRANATE MOJITO

Pom Wonderful, Bacardi Superior rum, lime juice, simple syrup, mint, cucumber, club soda.

Inspired by the pomegranate mojito at the Fairmont Kea Lani in Maui. The key is to infuse the juice + rum mixture overnight.

Ingredients

  • 2 c Pom Wonderful juice
  • 1 1/3 c Bacardi Superior rum
  • 1/2 c simple syrup
  • 4 limes juiced
  • 1/2 large cucumber
  • splash of club soda

Instructions

TO INFUSE MIXTURE

  1. Slice cucumbers. Set aside.

  2. In a sealable container, combine pomegranate juice, rum, simple syrup, and lime juice.

  3. Add mint sprigs and cucumber slices to container.

  4. Seal and refridgerate overnight.

TO MAKE COCKTAIL

  1. Strain juice + rum mixture to remove mint sprigs and cucumber slices.

  2. Pour juice + rum mixture over ice. Top with club soda. Garnish with lime and mint.
