Momify your kids’ favorite pancake batter with these healthy add-ins.
Tell me if this sounds familiar: You’ve just made pancakes for your whole family and there is enough Bisquik left in the bowl for a few more. You haven’t eaten, but the idea of plain pancakes doesn’t sound that appealing or healthy to you.
You could use the extra batter to make and freeze pancakes for the kids, which we both know you’ll end up throwing away in a month, or you can mix in a few ingredients to create a healthier version for yourself. While these may not meet the almond or oat flour standards of Instagram, they’re easy, delicious, and time saving, and that’s winning in my book.
The Foundation of a Healthier Pancake
With a base like Bisquik or Krusteaz, you have what you need to build your own pancake. In the recipe below, my focus was adding protein, probiotics and fiber. The Greek yogurt and granola both helped me hit the mark, with the perk of adding texture. I also had a bunch of nearly overripe kiwi fruit, which I dumped on top as the finale.
You can use any of your favorite fruits, nuts, chocolate, quinoa or seeds to invent your own perfect mix-in. The best part is you can feed your family while satisfying your cravings for a healthier option. Bonus points if you get your kids to start asking for your healthier recipe instead of the standard.
