My grandmother’s famous recipe.
The key to this perfect summer side dish is the combination of mayonnaise and Miracle Whip. Even if you hate Miracle Whip like I do, I promise you’ll love it in this recipe.
INGREDIENTS
- 1 box (4 cups) of regular sized elbow macaroni
- 1 c mayonnaise
- 1 c Miracle Whip
- 1/2 c sweet relish
- 1 tbsp of apple cider or white vinegar
- 1 tbsp sugar
- 1 large or 2 small tomatoes, chopped
- 1 cucumber, peeled and chopped
- 4 large hard boiled eggs, chopped
- 1 small red onion, chopped
- salt and pepper to taste
INSTRUCTIONS
- 1. Cook the macaroni and let cool.
- Stir in relish.
- Dice the eggs, tomato, cucumber, and red onion. Gently fold into macaroni.
- In a separate bowl, whisk the mayonnaise, Miracle Whip, sugar, and vinegar. Season with salt and pepper to taste.
- Pour half the dressing over the pasta mixture and stir. Gradually add more dressing until you reach your desired texture.
Dish can be made ahead and refrigerated overnight. Stir in extra dressing just before serving.
