When Levon was six months old, we spent five amazing days in Maui, where we discovered the hotel’s signature poolside cocktail: the pomegranate mojito. After returning home, I spent several weekends trying to recreate the recipe, which became our go-to summer cocktail to serve at parties. The key is to infuse the juice + rum mixture overnight.

Pom Wonderful, Bacardi Superior rum, lime juice, simple syrup, mint, cucumber, club soda.

- 2 c Pom Wonderful juice
- 1 1/3 c Bacardi Superior rum
- 1/2 c simple syrup
- 4 limes juiced
- 1/2 large cucumber
- splash of club soda

Slice cucumbers. Set aside.

In a sealable container, combine pomegranate juice, rum, simple syrup, and lime juice.

Add mint sprigs and cucumber slices to container.

Seal and refridgerate overnight.

Strain juice + rum mixture to remove mint sprigs and cucumber slices.

Pour juice + rum mixture over ice. Top with club soda. Garnish with lime and mint.
