Perfect for lunch or dinner.
I eat a version of this healthy winter salad every day for lunch. It pairs perfectly with grilled chicken or shrimp and is satisfying enough to be meatless. For the dressing, any balsamic will do, but this is my absolute favorite, which I discovered at our local farmer’s market. All the ingredients can be prepped and stored in the refrigerator for easy weekday lunches.
Ingredients:
Baby romaine
Butternut squash, cubed and roasted
Quinoa
Blackberries
Carrot ribbons
Goat cheese
Walnuts
