Sweet, juicy mango paired with onion, jalapeno, lime and cilantro.
Summer meals should taste like they came from a spa resort, am I right? Fresh, healthy and flavorful — that’s what my taste buds want these days. This mango salsa satisfies my craving and takes just minutes to throw together, no cooking required. That’s a vacation in itself!
This salsa makes the perfect topping for almost anything, or you can eat it straight from the bowl with tortilla chips and a margarita. I love to eat it atop salmon and quinoa, and it pairs well with BBQ & grilled meats, tacos, and even salad.
INGREDIENTS
3 cups mango, chopped (2 medium mangos or 1.25 lbs pre-cut)
1/2 red onion
¼ cup chopped cilantro or flatleaf parsley (parsley is a great sub for cilantro haters)
1 jalapeno
1 lime (for zest & juice)
INSTRUCTIONS
- Cube mango into ½ inch pieces.
- Finely dice the red onion.
- Chop cilantro (or flatleaf parsley).
- Dice jalapeno, removing seeds and ribs to make it less spicy.
- Add chopped ingredients into a large bowl, topping with the zest and juice of one lime.
- Mix and serve!
