Mango Salsa

Sweet, juicy mango paired with onion, jalapeno, lime and cilantro.

Summer meals should taste like they came from a spa resort, am I right? Fresh, healthy and flavorful — that’s what my taste buds want these days. This mango salsa satisfies my craving and takes just minutes to throw together, no cooking required. That’s a vacation in itself!

This salsa makes the perfect topping for almost anything, or you can eat it straight from the bowl with tortilla chips and a margarita. I love to eat it atop salmon and quinoa, and it pairs well with BBQ & grilled meats, tacos, and even salad.

INGREDIENTS

3 cups mango, chopped (2 medium mangos or 1.25 lbs pre-cut)

1/2 red onion

¼ cup chopped cilantro or flatleaf parsley (parsley is a great sub for cilantro haters)

1 jalapeno

1 lime (for zest & juice)

INSTRUCTIONS

  1. Cube mango into ½ inch pieces.
  2. Finely dice the red onion.
  3. Chop cilantro (or flatleaf parsley).
  4. Dice jalapeno, removing seeds and ribs to make it less spicy.
  5. Add chopped ingredients into a large bowl, topping with the zest and juice of one lime.
  6. Mix and serve!
