This salad uses our most popular food post — The Best Rub for Grilling and Barbecue — for the steak and your favorite balsamic dressing to top. If you’re looking for recommendations, this is the dressing we use in our kitchen. For the candied pecans, you can’t go wrong with Trader Joe’s, but if you’re up for making your own, Martha Stewart’s recipe can’t be beat. Goat cheese is our go-to, but gorgonzola and blue are also delicious in this dish.
Ingredients
2 lbs Skirt steak (flank steak or flap meat works also)
¼ cup of this dry rub
baby romaine
strawberries, sliced
candied pecans
goat cheese (to top)
balsamic dressing
Instructions
For the steak:
- Heat a gas grill with all burners on high, or prepare a charcoal grill for high heat.
- Sprinkle a generous amount of rub on both sides of the meat and let sit at least 15 minutes while the grill heats.
- Grill the meat quickly, no more than 3-4 minutes per side for medium rare. (Less for very thin pieces, more for flank steak, which will be thicker.)
- Slice the steak across into 1/2 inch wide strips.
For the salad:
In a large serving bowl, toss the romaine, strawberries, and candied pecans. Top with steak, sprinkle with goat cheese, and drizzle with balsamic dressing and serve.
