A refreshing, citrus-infused take on the classic. I love lemon balm, but too much can result in a medicinal or soapy taste. Freshly cut, homegrown leaves are more flavorful than store bought ones, so if you find the lemon balm in your cocktail to be overpowering, simply use less.

- 2 sprigs of lemon balm
- 1 1/2 oz. simple syrup
- juice from 1/2 meyer lemon
- 2 oz. Bombay Sapphire gin
- 4 oz tonic

Muddle simple syrup and lemon balm sprigs in a cocktail shaker. Add gin and lemon juice. Fill shaker with ice and shake vigorously.

Strain cocktail into a glass filled with ice. Top with tonic and garnish with lemon balm sprig.
